Honey can be stored for thousands of years in closed pots – it has even been found in ancient Egyptian tombs.

The secret of its long life is that when the nectar settles in the combs, the bees furiously fan it with their wings to speed up the evaporation of water. Honey’s low water content and high acidity are two of the main reasons it doesn’t spoil – food spoilage bacteria cannot live in these conditions. Hydrogen peroxide also has antibacterial properties. This way the honey stays fresh during the cold winter months and much longer in our jars.
